Irish eyes smile with easy soda bread

Irish Soda Bread is one of those recipes I make once a year, namely for St. Patrick's Day, which is Tuesday. This simple recipe is really satisfying, as you can have a fresh loaf of bread from start to finish in about a half hour.

Today's Busy Cook page in the Poughkeepsie Journal features a recipe for Irish Soda bread from the Culinary Institute of America in Hyde Park. It's quick and easy to make.

My Irish Soda Bread calls for buttermilk and dried cranberries, which makes the loaf a bit richer and brighter from the sweet taste of the dried cranberries.
Whichever recipe you use, don't overknead the dough or you will end up with a tough loaf.
And don't forget to score a cross in the top of the loaf before baking to ward off those evil spirits (and, of course, to help the loaf expand)!

Try out both recipes and you'll surely be ready for those smilin' Irish eyes come Tuesday.
